Plumlee began his college career at Ole Miss but found himself playing various positions instead of consistently quarterbacking. After the 2021 season, he made the decision to join Gus Malzahn at UCF in hopes of realizing his potential as a quarterback.
In 2022, Plumlee had a solid season as UCF's quarterback, impressing both Malzahn and fans alike. Malzahn commended Plumlee's growth, stating that he had become a completely different player compared to the previous year. To further develop Plumlee's skills, Malzahn brought back Darin Hinshaw as the offensive coordinator. Hinshaw, a former UCF quarterback himself, returned to the Knights after a stint as UAB's OC.
Malzahn's objective for the upcoming season is to make the offense more vertical. Despite the offense's overall ranking of No. 20, the yards per completion were disappointingly low, landing at No. 88 in the country. To achieve this goal, Plumlee will need to rely more on his arm than his legs.
Plumlee quickly adapted to Malzahn's offense, showcasing his talent and proving his worth. In his first season with UCF, he played in 13 games, earning Second-Team All-American Athletic Conference honors. He threw for 2,586 yards, 14 touchdowns, and eight interceptions while leading the Knights in rushing with 861 yards and 11 scores. Plumlee's remarkable performance included tying a 35-year-old UCF record by accounting for seven touchdowns in a single game against Temple. He even outrushed every other FBS quarterback.
By the end of the season, Plumlee's contributions helped UCF rank No. 9 in rushing (228.3 ypg) and No. 17 in total offense (469.5).
Prior to UCF, Plumlee spent three seasons at Ole Miss, playing under Matt Luke and Lane Kiffin. Despite his success as an all-purpose player, Plumlee's true passion has always been quarterbacking. During his time at Oak Grove High School in Mississippi, he threw for an impressive 5,430 career yards with 51 touchdowns and 19 interceptions.
